PSN member Lauren was travelling in Europe last year, learning about farming and food production, including natural cheese-making in Italy and Switzerland. She visited the Slow Food Movement Cheese Festival in Bra in Northern Italy, and did a cheese making workshop with David Asher, the legendary Canadian natural cheese-making rebel.

Lauren will speak about the basic natural cheese-making processes as well as the various cheeses she made, which has many similarities with sourdough making, and will bring some natural local cheeses to share. She will also share some of her other experiences, from working on a goat dairy in Switzerland in summer making hay, and her time in an "agrotourismo" in Turin that grew hops for beer they produced.
